What is the special thing that differ summer keto diet desserts? First of all, the bright taste of fruits and berries, no matter whether it is ideal for hot weather ice cream, cocktails or cake. In this article we have collected several recipes that are perfect to enjoy the summer weather and take everything from this time.
Despite the content of fruits and berries in the recipes, you are still able to eat them on a keto diet, as the amount of carbs are in a good limits. In addition, below is the nutritional value, so you can easily calculate whether you can eat a couple of pieces or make a child’s dream come true and eat the whole low carb cake.
Summer strawberry biscuit
Strawberry is the most popular berry in summer. It attracts not only with its juicy and sweet taste, but also a bright red color. Therefore, we suggest you to prepare a biscuit low carb cake with meringue and strawberries. Light, fruity keto diet dessert becomes even tastier if you keep it in fridge.
For 25 cm in diameter (10 servings) low carb cake:
- 3 egg whites
- 30 g coconut flakes
Beat egg whites, add the sweetener and the flakes. For some more time whisk it until all the components are combined into a smooth mass. Let stand for some minutes. At this time, prepare biscuit for the keto diet dessert.
- 4 eggs
- 40 g coconut flour
- 40 g of melted coconut paste or butter
- 1 tbsp of baking powder or soda
Beat eggs with sweetener, add the sifted coconut flour, coconut paste/butter and baking powder/soda. Thoroughly but carefully mix everything. Place on a greased baking form.
Then put the meringue on top of the keto diet dessert.
Bake for 25 minutes at 180 degrees, cool, and then cut in half lengthwise (so that two layers are formed, one of them on top with meringue).
- 400 g strawberries
- 40 g of Chia seed
- 15 g gelatin
Gelatin pour with boiling water and allow to dissolve. After that drop the chopped strawberries. When the jelly has cooled down a little, add the Chia seeds and mix thoroughly.
Put the berry jelly in the fridge and keep until the mass is slightly thickened.
Then put the mass between the cakes.
Place the low carb cake in the fridge until it became solid (preferably overnight).

Berry cake with blueberries
The recipe is for 12 servings of the keto diet dessert.
- 4 eggs
- 100 g coconut paste (or butter))
- 100 g of bitter chocolate 85% at least
- optional: a little cocoa for dusting
Coconut paste (or butter) melt together with the chocolate broken for little pieces. Let it cool.
Beat the eggs (2 minutes is enough), then pour the cooled chocolate mass and mix a little more until smooth.
Pour into a well-buttered baking dish. Bake for 10 minutes at 170 degrees.
During the baking, prepare the filling for the keto diet dessert.
- 250 g of cottage cheese (can be replaced with mascarpone or nut paste)
- 20 grams of chopped nuts (or coconut flakes)
- 100 g blueberries (or other berries and fruits, with this biscuit all is perfectly combine)
Put the berries in a bowl, add 3 tablespoons of water and a little boil it. Then remove from heat and add the cottage cheese grated with a fork (or mascarpone/ nut paste).
Also add the flakes (or nuts) and mix well. Thick, but not dry mass should be formed. Add sweetener.
Baked low carb cake cut into 2 equal parts. On 1 part put the filling mass. Cover it with the second one from the top.
Cut into portions and sprinkle with cocoa.
Keto diet dessert can be stored in the fridge for 3-4 days or frozen for longer.

Zebra babka with orange flavor
Babka, of course, is not summer keto diet dessert, as it has rather tight consistency and it can’t be called “light”. However, speaking of summer recipes, we can’t pass it by, because it is very tasty and easy to adapt to any theme. If for the Christmas version we can add ginger, then in the summer we can make an incredibly delicious keto diet dessert by adding citrus and berries.
- 3 eggs
- 10 g cocoa
- 50 g coconut flour
- 120 g coconut milk
- 20 grams of any berries
- 20 gr of orange peel
- flavoring orange
- 1 tablespoon of baking powder or soda
- optional: add 3 tablespoons of coconut flakes to the dough
Beat eggs with sweetener in a lush mass (2-3 minutes should be enough). Add the remaining ingredients (except cocoa) and mix until smooth.
Pour half of the dough into a greased baking form (the form can be sprinkled with coconut flakes).
In the remaining mass add cocoa, stir and pour on the white layer. Both masses should be lush, but not thick.
Bake the keto diet dessert in the oven for about 40 minutes at 180 degrees.
- 20 g inulin
- 1 tablespoon water
Mix inulin with water. If lumps are formed, you can add a little water and stir, and then leave the glaze for a while to thicken. Pour the icing over the low carb cake.
