Keto jelly recipes – 5 terrific low carb recipes

In keto dessertscooking we use different special ingredients to get the desired consistency and necessary properties of the dough. Sooner or later, we will have tried all available keto diet recipes, and then in the kitchen experiments and improvisation will begin.

So once I had a question – what thickener agent is better to use for low carb jelly? How to make keto jelly as low-calorie and low-carb as much? Or, on the contrary, a super calorie fat bomb?

So I made the test with the wide range of proportions and ingredients, with trial and error I’ve found the best number of thickeners and sweeteners. Below are the resulting recipes with nutrition and energy value information.

For the keto jelly preparation, I used a special silicone mold to make low carb jelly bears.

And filled it with the special pipette that make the process much easier. It is important to get the one that is resistant to high temperature, because the hot keto jelly mass is poured immediately after cooking.

Keto jelly – zero calories

Not zero, of course, and 30 kcal per 100 g, but as these calories come only from fiber contained in agar-agar, we can still say that they do not have calories.
In hot weather, vegan agar agar works better. Its advantage over gelatin is that with it low carb jelly will not melt when heated.
The trick of the recipe is using a soluble drink Bolero. I have never seen it in our stores, but you can buy it here, for example. Its advantage is that it does not contain calories and carbohydrates.


• 100 ml cold water
• 1/3 sachet Bolero (3 g)
• 15 g agar-agar


  1.  Mix the Bolero with water, add agar-agar.
  2. Put on fire and cook for about 2 minutes, stirring until agar-agar is completely dissolved.
  3. Pour the keto jelly mass into oiled molds and put in the refrigerator to cool.
Bolero has a very bright taste, and low carb jelly prepared on its basis does not require additional sweeteners. Bolero bears are translucent and have a rich color.

Keto strawberry jelly


• 400 g strawberries
• 15 g gelatin (can be replaced with agar-agar)
• 1/3 teaspoon stevia
• 1 tablespoon lemon acid


  1. Chop the strawberries in a blender.
  2. Add stevia and lemon acid to the strawberry puree. Stir and pot the gelatin there.
  3. Heat the mass on the plate by stirring until the gelatin is completely dissolved.
  4. Pour the resulting jelly mass into a greased form (or forms), put in the fridge until solidification.

Keto fruit smoothie jelly


• 100 ml of ready-made fruit smoothies without additives (you can make your own )
• 1 tablespoon lemon acid
• 25 g of erythritol
• 1 teaspoon starch (I used arrowroot, but corn is well too)
• 15 g gelatin


  1. Add erythritol, starch and lemon acid to the smoothie and mix.
  2. Pour all the keto jelly mass in a pan and add the gelatin.
  3. Keep on fire. Stir until gelatin is completely dissolved.
  4. Pour the low carb jelly mixture into greased forms. Put in the fridge to cool.
If the color seems pale, you can make it brighter by adding the appropriate ingredients. Add spinach to make the green color brighter, for yellow – turmeric, purple – blueberries. All these ingredients are used as natural dyes, and small amount of them is enough to get intense color.

Vegan keto almond and vanilla keto jelly


• 100 ml unsweetened almond milk
• 1/3 teaspoon stevia
• 1/2 teaspoon vanilla paste
• 20 g of erythritol
• 15 g agar-agar


1. Add erythritol, stevia and vanilla paste to the milk and mix.
2. Pour everything into a saucepan and add gelatin.
3. Keep on fire stirring constantly until gelatin dissolves completely.
4. Pour the keto jelly mass into the greased molds and put it to solidify in the fridge.

Keto jelly fat bomb


• 100 ml of water
• 100 ml cream 36%
• 15 g of erythritol
• 15 g gelatin
• 1/3 teaspoon stevia
• 10 g – dark chocolate


1. Mix the cream with erythrol, stevia and chocolate (grate it or melt before).
2. Dissolve gelatin in water.
3. Put the marmalade mass on the fire and stirring constantly pour the dissolved gelatin. Be sure to do it gradually, otherwise the ingredients will not be combined, and ready-made keto jellies will delaminate.
4. Pour the low carb jelly mass into greased molds and place in the fridge.

How many calories in keto jelly?

Finally, the nutritional value of the experimental keto jelly. All the cooked gummy bears contain fewer calories than usual ones bought in a shop, even the last recipe of the low carb jelly fat bomb. Why? This is mainly due to the replacement of maltite used by manufacturers, which contains 250 kcal per 100 g, when used in our experiment Ayurvedic thickeners are less caloric.

Important rule: prepare all ingredients and tools before heating keto jelly mass – when it is hot, you will have very little time before it starts to thicken, there will be no time to look for dishes.
