Keto blueberry pie – gluten free, sugar free & flour free
Soft, crumbly almond cake – what could be better? Just that it’s made with fresh blueberries. Also the fact you can eat it without feeling guilty. This dough does not contain gluten, sugar or flour. So it is low carb baking and is perfect for keto diet, you can eat it without remorse and without worrying about the figure.
Like most low carb baking and keto desserts, this cake is made from almond flour dough. In the case of this keto dessert is also added fiber. Fiber in keto dessert replaces gluten and makes the dough more elastic, it becomes easier to work with.
Keto blueberry pie is prepared quickly and easily. Instead of sugar we add xylitol, also called birch sugar, in the low carb baking.
And of course blueberries. They add refreshing summer flavor to the cake. As an alternative, you can use special low-calorie jams. But we cook in the summer, so it is better to use the chance and use fresh berries for the low carb baking.
For the keto pie with 25 cm diameter
- 200 g almond flour
- 1 teaspoon baking powder
- 2 tablespoons psyllium or fiber
- pinch of salt
- 180 g of xylitol
- 300 g blueberries
- 4 eggs
- 50 g clarified butter
Set the oven to heat up to 175ºC.
At this time, mix the eggs with xylitol and salt to get bulk mass. Add the melted and cooled oil, and then mix thoroughly.
In a separate bowl, mix almond flour, baking powder and fiber (psillium). Add to the egg mixture and stir quickly. Then add blueberries and mix again with a spoon.
Grease baking form with oil (or use a special silicone baking dish) and fill it with the dough. You can use any form and make pie or some muffins.
Put the keto pie in a preheated oven and bake for 35-40 minutes.
The final step is decorations on the low carb baking, but it’s not really necessary. You can sprinkle the cake ( or cakes or muffins) with nuts, nut flakes, berries, chocolate and so on.
